Airport chairs have many different people touch them in a day. The management of the airline has to provide a cleaning crew to keep the airport chairs clean. Fabric covered chairs are much more difficult to clean and they have to be replaced sooner than the chairs crafted from hard materials.

Black seats should be less likely to show stains, but the darker seats hide the stains from spills so well that the janitorial staff may miss them and people could ruin their clothing because of the oversight. White chairs show stains so well that often the stain discolors the seat and leaves it with the appearance of dirt when it has been cleaned. Grey is a color that shows the presence of dirt without easily being stained to the point that it always looks dirty.
